What a wonderful discovery this was! Finally found a super satisfying and tasty breakfast – or brunch – suitable for all year round eating! A great alternative to gluten free toast – possibly cheaper too.
Sweet potato toast (aka kumara toast) tastes similar to some gluten free, plant based/vegan pancakes or perhaps a little like pumpkin fritters (from South Africa) but less hassle and sugar free too.
Found this recipe firstly from the Irish Happy Pear guys and then the FridgeCam peeps.
Pictured (above) are my interpretations of those recipes with some variations! Sauerkraut, vegan cheese and herbs (herbs make everything better – in this case mint and coriander); and added cinnamon with the warmed banana, peanut butter sweet potato toast.
Easy prep. Wash, Slice and choose either grill or toast in toaster – approx 5-9 mins. Don’t have a grill or toaster – pan fry with a tiny bit of evoo (extra virgin olive oil) instead.
